First Course – Hunter’s Stew: Braised Venison, Root Vegetables, Barley; Wine Pairing: Gruet “Cuvée 89” Brut
Second Course – Fettuccini: Rabbit and Rosemary; Wine Pairing: Roth Estate Chardonnay
Third Course – Confit of Duck: Drunken Pears, Bitter Lettuce; Wine Pairing: Browne Family Heritage Pinot Noir
Fourth Course – Bison Rossin: Bacon Wrapped Bison, Morel Mushrooms, Pâté aux Fois Gras, Medoc Sauce; Wine Pairing: Foley Johnson Cabernet Sauvignon
Dessert Course – Chocolate Chess Pie: Chantilly Cream; Wine Pairing: Red Tail Ridge Good Karma Riesling
