On Friday, June 23, 2017, 7:30 p.m., Restaurant Nicholas in Red Bank, New Jersey, will host a special Whistle Pig Dinner, featuring legendary Master Distiller Dave Pickerell.
Whistle Pig’s Master Distiller Dave Pickerell, Former Master Distiller for Maker’s Mark for 14 years, will visit Restaurant Nicholas for an evening of storytelling, delicious food, and killer Whistle Pig selections. Whistle Pig is known for 100-proof straight rye whisky (made from 100 percent rye mash), double-barrel aged for at least 10 years on their Vermont farm. Nicholas and the Restaurant Nicholas kitchen had an absolute blast creating an incredible nose-to-tail menu to complement Pickerell’s selections for the evening.

First Course: Tête a Cochon, Red Wine Mustard, Pickled Onion; Porky Pig Cocktail: Farm Stock Whistle Pig Rye, Bacon-Infused Whistle Pig Maple Syrup, Lemon
Second Course: Pig Cheek Ravioli, Bacon Butter, Aged Gouda; Whisky Pairing: 10-Year Whistle Pig Rye vs. 10-Year “Nicholas Barrel” Whistle Pig Rye
Third Course: BBQ Pulled Pork Sandwich, Butter Toasted Brioche Bun, Apple Slaw; Whisky Pairing: 12-Year “Nicholas Barrel” Bespoke Whistle Pig Rye
Fourth Course: Slow-Roasted Porchetta, Smoked Potato Purée, Braised Mustard Greens, Whistle Pig Maple Jus; Whisky Pairing: 15-Year Whistle Pig Rye
Fifth Course: Duo of Whoopie Pies
