Stockton Inn Executive Chef Recreates James Beard House Menu

Stockton Inn -Exec Chef Alan HeckmanOn January 28, 2016, at the James Beard House in New York City, Executive Chef Alan Heckman of the Stockton Inn, Stockton, New Jersey, presented an unforgettable five-course tasting menu entitled A Midwinter Night’s Dream.

“It was the highlight of my career,” notes the 30-year-old Heckman. “But many people from our area were not able to make it to New York for that special evening, which is why I decided to recreate the same menu at the Stockton Inn.”

The sumptuous menu launches today, Wednesday, March 2, and will be available through April 3, 2016.

Tuna Crudo: Asian Pear, Balsamic Glaze, Nori & Crispy Rice; Wine: Gruet Blanc de Noirs Brut NV

Poached Sun Shrimp: Green Apple & Celery Velouté, Lime & Chili Oil; Wine: Nigl Gruner Veltliner Qualitatswein Trocken Kremser Freiheit 2014

Braised Veal Cheek: Parsnip Purée, Charred Brussels Sprout Leaf & Truffle; Wine: Damilano Nebbiolo d’Alba 2013

Char-Grilled Venison Loin: Roasted Cauliflower, Wheat Berry & Harissa; Wine: Frank Family Zinfandel 2012

Chocolate & Yuzu Cremeux: Shiso, 5-Spice Shortbread, Black Sesame Paste; Wine: Josef Leitz Rudesheimer Magdalenkreuz Riesling Spatlese 2013
