On Monday, February 29, 2016, Chef Todd Villani of Terre à Terre in Carlstadt, New Jersey, will share his kitchen for Leap Day, hosting Chefs Bryan Gregg of Escape in Montclair, NJ, and Rob Ubhaus of Redux in Madison, NJ.
The Chefs will usher in Old Man Winter with a creative six-course menu highlighting the hearty flavors that complement the colder weather and giving homage to the special day that only comes around once every four years.
First Course: Sautéed Scallops, Crispy Prosciutto, Brussels, Miso Mushroom Purée (Chef Villanai)
Second Course: Spring Lamb Carpaccio, Pickled Celery Root, Smoked Apple Vinaigrette (Chef Gregg)
Third Course: Crisp Frog Legs, Parsley Mousseline, Black Garlic Chips, Lemon Powder (Chef Ubhaus)
Fourth Course: Rabbit Confit Vol-au-Vent, Prunes, Root Vegetables, Grain Mustard (Chef Villani)
Fifth Course: Pavé of “29th” Day Aged Beef, Trumpet Mushrooms, Parsnip Purée, Bordelaise (Chef Ubhaus)
Sixth Course: Sweet Corn Bread Pudding, Caramel Corn, Popcorn Ice Cream (Chef Gregg)
