On Tuesday, February 23, 2016, 7:00 p.m., Restaurant Nicholas in Red Bank, New Jersey, will host another in its series of popular winemaker dinners. On February 23rd, owner Peter Stolpman will celebrate Stolpman Vineyards, 100% estate-grown wines crafted on the limestone hills of Santa Barbara, California.
Mr. Stolpman will be present to discuss 20 years of viticultural experimentation, including hand harvesting and organic farming. The Restaurant Nicholas kitchen will create an exquisite five-course menu to pair with Stolpman’s unique offering of Rhone varietals.
FIRST COURSE – Hamachi Crudo: Pickled Fennel, Brûléed Clementine, Pink Peppercorn, Apple Vinaigrette; Wine Pairing: 2014 Ballard Canyon, Sauvignon Blanc, Stolpman
SECOND COURSE – Mushroom Risotto: Chanterelles, Mascarpone, Mushroom Foam; Wine Pairing: 2013 Ballard Canyon, Estate Syrah, Stolpman
THIRD COURSE – Seared Duck: Israeli Cous Cous, Brussels Sprout Leaves, Orange Marmalade; Wine Pairing: 2013 Ballard Canyon, Syrah, Originals, Stolpman
FOURTH COURSE – Pan-Roasted Prime New York Strip: Caramelized Onion Purée, Potato Croquet, Creamed Spinach; Wine Pairing: 2013 Ballard Canyon, La Croce, Syrah & Sangiovese, Stolpman
FIFTH COURSE – White Chocolate Orange Mousse: Yuzu Ice Cream, Orange Caramel
