Caymus Vineyards 1On Saturday, January 16, 2016, the Gables at Chadds Ford, 423 Baltimore Pike, Chadds Ford, Pennsylvania, will host a special dinner featuring the wines of Caymus Vineyards of California’s Napa Valley.

The complete menu and wine pairings are noted below…

First Course: Roasted Oyster and Maitake Mushrooms, Baked Goat Cheese Tart, Warm Pesto; Wine Pairing: Emmolo Sauvignon Blanc, 2013

Second Course: Lemongrass Poached Sea Scallop, Long Grain Green Curry Rice, Spiced Apple Butter; Wine Pairing: Mer Soleil Chardonnay, 2012

Third Course: Artisanal Cheese Plate, Local Accompaniments; Wine Pairing: Belle Glos Pinot Noir, 2014

Fourth Course: Balsamic and Coffee Braised Short Ribs, Smoked Celery Root Purée, Fall Vegetables, Reduced Braising Liquid; Wine Pairing: Caymus Vineyards Cabernet Sauvignon, 2011

Fifth Course: Chocolate Hazelnut Tart, Hazelnut Shortbread Crust, Bittersweet Chocolate Ganache, Merlot-Infused Raspberry Sauce; Wine Pairing: Emmolo Merlot, 2011
