Chakra3On Wednesday evening, October 14, 2015, 6:30 p.m., Chakra Restaurant in Paramus, New Jersey, will host a special four-course dinner paired with France’s Pol Roger Champagnes. The special guest of the evening will be Hugues Romagnan, Export Director of Pol Roger.

The complete menu and Champagne pairings are noted below…

First Course: Oysters on the Half Shell, Apple, Lemon, Yuzu; Champagne Pairing: Pol Roger Bru NV, Epernay

Second Course: Lobster Ravioli, Kabocha Squash, Sea Urchin Foam; Champagne Pairing: Pol Roger Rosé 2006, Epernay

Third Course: Veal Tenderloin, Braised Cucumbers, Crawfish Velour; Champagne Pairing: Pol Roger 2004, Epernay

Fourth Course: Baked Camembert, Fig Toast; Champagne Pairing: Pol Roger Pure Extra Brut NV, Epernay
