Terre à Terre Hosts Dinner to Benefit Slow Food of Northern New Jersey

Terre a Terre - ChefOn Thursday, October 8, 2015, 7:00 p.m., Chef Todd Villani of Terre à Terre, 312 Hackensack Street, Carlstadt, New Jersey, will prepare a special four-course fall menu to benefit Slow Food Northern New Jersey’s school and community garden fund.

The menu for this special event is noted below…

Amuse: Shibumi Farm Deviled Mushroom stuffed with Truffle, Duck, and Thyme

First Course: Fire-Roasted Butternut Squash Soup, Crispy Farro, Sage

Second Course: Sockeye Salmon, Cauliflower Purée, Bacon-Roasted Brussels Sprouts, Charred Chive, Caper Vinaigrette

Third Course: Slow and Low-Braised Short Ribs, Goat Cheese Potato Gratin, Sautéed Greens, Cipollini Onions

Dessert: Apple Croissant Bread Pudding, Cinnamon Gelato

*Meat and Fish can be removed from dishes to accommodate vegetarians.

The cost of the dinner to benefit Slow Food of Northern New Jersey is $80.00 per person (tax and gratuity are included). Diners are invited to BYO wine or beer. Tickets must be purchased in advance at www.slowfoodnnj.org by September 30, 2015.

Slow Food NNJ raises funds for school and community gardens in low-income neighborhoods and promotes food that is local, raised sustainably, and is affordable to all.

Chef Todd Villani is one of New Jersey’s top chefs. He was trained under Marcus Samuelsson of Aquavit and Red Rooster in New York, and was chosen to prepare a dinner at the Beard House in New York this past August. He is dedicated to sourcing seasonal ingredients from local farms.
