Union Republic - ExteriorFor New Year’s Eve, 2014, proprietors Chef Gregory Torrech and Noah Sexton of Union Republic, 340 Third Street, Jersey City, New Jersey, have conceptualized an ambitious six-course tasting menu they call Emerge 2015.

Sea: King Crab, Butter Poached Kumamoto Oyster, Uni… Soil: Escargot, Cured Egg, Truffle… Underfoot: Quail, Maitake Mushrooms, Cabbage, Wild Rice… On Land: Colorado Leg of Lamb, Sunchoke, Celeriac… Atmosphere: Hudson Valley Duck Breast, Foie Gras, Canard Bacon… Space: Moon Pie

Vegetarians may take heart, however, as a scrumptious course-for-course meat-free tasting menu is also available.

The restaurant will also be throwing a party from 11:00 p.m. – 2:00 a.m. Their signature ramen will be available à la carte at the counter and high-top tables.

The tasting menu is priced at $75.00 per person (plus beverages, tax & gratuity); $35.00 per person with wine pairings.
