On Wednesday, February 26, 7:00 p.m., restaurant Nicholas (www.restaurantnicholas.com) in Red Bank, New Jersey, will host a special wine dinner highlighting the estate-grown wines of Stolpman Vineyards (www.stolpmanvineyards.com) of Santa Barbara, California.

Owner Peter Stolpman will pour his 100% estate-grown wines alongside a five-course menu prepared by Executive Chef Nicholas Harary and Chef de Cuisine Nicholas Wilkins.

Amuse: Chestnut Purée, Potato Espuma

First Course: Slow-Poached Sashimi of Spanish Bonito, White Grapefruit, Sprouted Wheat Berries: Wine Pairing: Stolpman Sauvignon Blanc, Santa Ynez Valley, 2013

Second Course: Foie Gras Tortellini, Fresh Black Truffle Brown Butter Sauce; Wine Pairing:  Stolpman Roussane, L’avion, Santa Ynez Valley, 2011

Third Course: Pan-Roasted Loin of Veal, Black Trumpet Mushrooms, Celery Root Purée; Wine Pairing: Stolpman Syrah, Estate, Santa Ynez Valley, 2011

Fourth Course: Braised Short Rib “Bourguignon,” Black Truffle; Wine Pairing: Stolpman Syrah, Hilltops, Santa Ynez Valley, 2011

Fifth Course: Mango Mousse, Poached Mango, Toasted Coconut Ice Cream

The cost of the five-course Stolpman Vineyards wine dinner is $125.00 per person (plus tax & gratuity. All wines tasted will be available for purchase.
