On Wednesday, January 15, restaurant Nicholas (www.restaurantnicholas.com) in Red Bank, New Jersey, will debut its special “Black Truffle Menu,” which will be available until the end of the restaurant’s fresh truffle supply.

Black Truffle Menu…

First Course: Celery Root Purée, Apple Salad, Shaved Black Truffle

Second Course: Mushroom & Black Truffle Risotto

Third Course: Foie Gras Ravioli, Black Truffle, Brown Butter Sauce

Fourth Course: Braised Short Rib “Bourguignon,” Black Truffle

Dessert: Chocolate “Truffle”
