On Tuesday, January 7, Chef/Proprietor Peter Loria of Café Matisse (www.cafematisse.com), 167 Park Avenue, Rutherford, New Jersey, inaugurated the restaurant’s first à la carte menu, which will be available Sunday and Tuesday – Thursday only.
This new à la carte menu will be offered in addition to the existing Chef’s Tasting Menu, which is available every day, and will have the same creatively executed dishes and desserts as the Chef’s Tasting Menu, which will be available on Friday and Saturday only, with a newly added “small bites” section.
Chef/Owner Peter Loria stated: “I believe the new à la carte menu will provide our customers with more flexibility and convenience for dining on weeknights. They will still have the option to select our three, four, and five-course Chef’s Tasting Menu that they have come to know and enjoy on weekends.”
Chef Loria’s creative New American fare brings together unexpected flavor combinations that pique the senses as one delves into each of his artfully crafted dishes. Selections may change frequently as the chef whimsically plays with seasonal ingredients and flavor combinations, while some of the most popular guest favorites remain on the menu.
Some current menu items include: Matisse Burger: short rib, sirloin, and brisket burger, bbq short rib, pepper jack cheese, jalapeños, caramelized onions, hickory smoked bacon, guacamole, and toasted corn tortillas; Ricotta Tortelloni, and Meatball: angry tomato spicy Italian sausage Bolognese, sautéed peppers and onions, basil Robiola, tomato jam, parmesan; Cabernet Balsamic Glazed Beef Short Ribs: pumpkin squash purée, caramelized Brussels sprouts, potato Fontina cheese fritter, toasted pumpkin seeds, apple cider vinaigrette; Sushi Tuna, Lobster & Lump Crab: wasabi mayo, caramelized pineapple, curry fried oyster, lime curd, chili oil, and baby greens.
Hardly an afterthought, the decadent desserts provide a playfully delicious finish to the meal. Selections include: Amaretto Chocolate Cake: cannoli crème, Amerena cherries, chocolate mousse and chocolate espresso glaze; Vanilla Maple Glazed Tofu: candied honey butternut squash, chestnut crème sugared pumpkin seed clusters, sweet cranberry relish, cranberry honey, cinnamon, fresh nutmeg; Bittersweet Chocolate Tart: sweet peanut butter goat cheese mousse, caramelized bananas, bourbon white chocolate maple caramel, pecan molasses jam.
Café Matisse seats for service Tuesday – Thursday, 5:30 p.m. – 9:00 p.m.; Friday, 6:00 p.m. – 11:00 p.m.; Saturday, 5:00 p.m. – 10:00 p.m.; and Sunday, 5:00 p.m. – 9:00 p.m. Reservations are recommended.
