On Tuesday, December 31, restaurant Nicholas (www.restaurantnicholas.com) in Red Bank, New Jersey, will greet the New Year with a special three course menu, including a Champagne toast at midnight, priced at $125.00 per person (plus tax & gratuity).

2013 New Year’s Eve Menu:

Amuse: Chestnut Purée, Potato Espuma, Toasted Chestnuts

First Course (Choice of): Baby Field Greens: Caramelized Hazelnuts, Beaufort Cheese; Colorado Lamb Tartare: Japanese Eggplant, Goat Feta, Roasted Red Pepper Purée; Pickled Heirloom Baby Beets: Meyer Lemon, Sour Cream, Pistachio; Pan-Seared Day Boat Sea Scallop: Asian Pear, Brown Butter Powder, Pork Belly, Bacon Dashi; Pan-Seared Hudson Valley Foie Gras: Caramelized Onion Consommé, Bacon Jam; Lemon & Mascarpone Agnolotti: Vegetable “Bolognese,” Baby Artichokes, Smoked Eggplant
