On Christmas Eve and Christmas Day, the Grand Cascades Lodge of the Crystal Springs Resort, 1 Wild Turkey Way, Hamburg, New Jersey, will celebrate the holiday season with three delicious dining options. Restaurant Latour will serve a five-course menu highlighting flavors of the season and luxurious ingredients; Crystal Tavern will bring a seasonal, New American approach to Christmas with a three-course menu; and Springs Bistro will serve a four-course Italian Christmas menu.

Black Winter Truffle Flan: Hudson Valley Foie Gras, Wild Mushroom Fricassee, Garden Mâché

Roasted Chestnut Agnolotti: Maple Cured Gravlax, King of the Hill Lima Beans, Sage Cream

Rifle Ranch Lamb Ribeye: Medjool Dates, Pistachio, Beluga Lentils, Garden Mizuna

Whole Basted Lola Duckling: Organic Wild Rice “Stuffing”, Neck Confit, Kumquat Lacquer, Winter Root Vegetables

Buche de Noël: Eggnog Ice Cream, Valrhona Chocolate Sauce, Meringue Mushroom

Restaurant Latour will be open 5:00 p.m. – 10:00 p.m. on Christmas Eve and 3:00 p.m. – 8:00 p.m. on Christmas Day. The cost of the five course menu is $110.00 per person; $170 per person with wine pairing. The regular menu will also be available.

APPETIZER (Choice of):  Roasted Winter Squash Soup: Grilled Ciabatta Crostini, Spiced Chestnuts; Skewered Jumbo Shrimp:  Braised Parsnip, Poached Kumquats, Truffled Spinach Emulsion

ENTRÉE ( Choice of): Pancetta Wrapped Day Boat Monkfish: Root Vegetable Ratatouille, Wilted Kale, Grapefruit Foam Herb Oil; Pan Seared Long Island Duck: Juniper Berry Gastrique, Confit Leg, Apricot Glazed Breast,  Whipped Celery Root, Braised Red Cabbage, Candied Sage

DESSERT: Plum Pudding: Sticky Toffee Pudding, Poached Damson Plums, Armagnac-Plum Ice Cream

Crystal Tavern will be open 5:00 p.m. – 10:00 p.m. on Christmas Eve and 11:00 a.m. – 10:00 p.m. on Christmas day. The cost of the three-course menu is $48.00 per person; $78.00 per person with wine pairing. The à la carte menu will also be available.

Springs Bistro will be open 5:00 p.m. – 10:00 p.m. on both Christmas Eve and Christmas Day. The Italian Christmas menu is priced at $54.00 per person; $84.00 per person with wine pairing. The à la carte menu will also be available.
