Chef Sam Fertik and Aaron Nemani, proprietors of Orange and Olive Caterers, 398 Central Avenue, Jersey City, New Jersey, recently introduced their new chef’s table and ten-course tasting menu. The menu will be offered Wednesday through Saturday, showcasing Chef Fertik’s sophisticated American cuisine.
A handcrafted wood chef’s table overlooking the kitchen will seat up to 12 guests with two seatings per evening by reservation Wednesday – Saturday. The chef’s table provides guests with an all-inclusive dining experience. Once guests reserve and pay via the convenient online booking system, they simply eat, drink, and enjoy when they arrive.
The chef’s table can be booked to host private parties of 20 people; and the Orange and Olive space can host in-house intimate cocktail parties up to 60 guests, cooking classes, or team building events.

Local Fluke: Ginger, Yuzu
Ravioli: Sweet Potato, Sage, Brown Butter
Artichoke: Parmigiano, Truffle, Shallot
Butter-Poached Maine Lobster: Lemon Gelée, Brown Butter Sabayon
Red Snapper: Cauliflower, Brussels Sprouts, Bacon, Black Garlic
Hudson Valley Duck: Butternut Squash, Heirloom Carrot, Confit
72-Hour Braised Short Rib: Gilfeather Turnip, Baby Fennel, Lemongrass, Kaffir Lime
Local Ricotta Hot: Brûlée, Truffle Honey, Currant Compote
Chocolate: Maple Pumpkin
The chef’s tasting menu is inclusive of filtered water by Vivreau, coffee and tea by Filicori Zucchini, service and tax. There is no liquor license so diners are encouraged to bring their own wine and spirits. Mocktails and additional courses are available for a supplemental fee. The price range is $132.00 – $174.00 per person contingent upon the aforementioned supplemental items and mocktails.
In addition to full-service off-premise catering, Orange and Olive also offers a variety of retail products, including: Minus 8 vinegars, salts, spices, maple syrup, and local products. Soon to be included will be house-made jams, pickles, and compotes.
