Restaurant Latour at Crystal Springs Resort, 1 Wild Turkey Way, Hamburg, New Jersey, is showcasing the prized Mangalitsa pig with a special “Mangalitsa Tasting Menu” from Thursday, October 17 – Sunday, October 20.
Raised by New Jersey’s own Mosefund Farm, Mangalitsa are a heritage breed of wooly pig from Central Europe descended from wild boar. They are much sought after by chefs for their rich, succulent meat. Crystal Springs worked directly with Mosefund in preparation for the dinner; first, choosing two specific pigs to raise; and then providing them with a special diet of acorn and chestnuts for three months.
The eight-course Mangalitsa Pig Tasting Menu created by Crystal Springs’ Executive Chef Timothy Fischer and Chef de Latour John Benjamin utilizes every part of the animal for a unique nose-to-tail dining experience. In addition, Sommelier Susanne Lerescu has created a special wine pairing highlighting the pinot noir grape to accompany the menu.

Hock: Smoked Ham, Green Pea Soup, Quail Egg
Neck: Butternut Squash, Sage, Raviolini
Rib: Spiced Pickled Raisins, Pine Nus, Petite Lettuce
Cheek: Fall Root Vegetable, Burgundy Black Truffle Broth
Belly: Pork Shortbread, Roasted Apricots, Micro Fennel
Loin: Braised Red Cabbage, Sweet Potato Croquette, Trotter Jus
Fat Back: Ice Root Spinach Toast, Lardo, Pickled Pearl Onions
Crackling: Honey Crisp Apple, Cinnamon Ice Cream, Cider Glaze
The cost of the eight-course menu is $135.00 per person; the special wine pairing featuring the pinot noir grape is an additional $60.00 per person.
