Restaurateur Jerry Maher and his partner, Kerri-Ann Sweeten, owners of Haven Riverfront Restaurant & Bar, 2 Main Street, Edgewater Harbor, Edgewater, New Jersey, which is scheduled to open on Wednesday, October 9, have named Peter Larsen of Westwood, New Jersey, as Executive Chef.
Chef Larsen is a graduate of the Royal Culinary Academy of Copenhagen, Denmark. Most recently, he held the positions of Executive Chef at The Goodwin (which he opened) and Artisanal (both in Manhattan). Prior to that, Mr. Larsen was Chef at Town (also in Manhattan) and Nobu Las Vegas.
Located just 20 feet from the Hudson River and midway between the George Washington Bridge and the Lincoln Tunnel, Haven features extraordinary Manhattan skyline views; Modern New American cuisine with classic roots; a comfortably chic aesthetic; outdoor seating; and a lively bar scene presenting a well-balanced mix of classic and contemporary cocktails.
Chef Larsen’s menus beautifully balance local seasonal ingredients, bright but complex flavors, and creative seasoning. Highlights from his fall dinner menu include Yellowfin Tuna Tartare with Avocado Purée… Braised Creekstone Farm Short Ribs with Marinated Chanterelles… and Miso-Glazed Chilean Sea Bass with Edamame Purée, Pearl Onions & Yuzu White Chocolate Sauce.
On the other hand, if you’re in the mood for more casual fare, Haven’s appealing new menus also include Mac ‘n’ Cheese “Parisienne”… Pretzel-Crusted Fried Calamari with Mustard-Scallion Remoulade… Korean Short Rib Sliders with Kimchi… Crab Cake Sliders with Pickled Cucumbers & Pea Shoots… and Pork Belly Sweet Potato Hash with Poached Eggs.
For dessert, the restaurant offers such tempting dishes as Chocolate Croissant Bread Pudding with Vanilla Sabayon and Kentucky Bourbon Sauce.
Haven will be open 7 days a week for dinner; lunch and brunch will follow soon after the opening on October 9.
