Seven-Course “Tastes of the Sea” Menu at Restaurant Nicholas

On Thursday evening, August 29, for one night only, Executive Chef/Owner Nicholas Harary and Chef de Cuisine Nicholas Wilkins of Restaurant Nicholas in Red Bank, New Jersey, will team together to create a menu that showcases the very best of New Jersey seafood and summer produce.

First Course, Amuses: O.A.S.I.S. Farms Heirloom Tomato Italian Ice, Barnegat Light Scallop, Basil Crystals; New Jersey “Fried Calamari,” Meyer Lemon

Second Course: Cape May Salt Oyster, Potato, Bacon Dashi; Wine Pairing: N/V Cramant, Grand Cru, Cuvée Restaurant Nicholas, Diebolt-Vallois

Third Course: Scottish Langoustine, Point Pleasant Honey, Elderflower, Wood Sorrel; Wine Pairing: 2012 Roero, Arneis, Bricco delle Ciliegie, Giovanni Almondo

Fourth Course: New Jersey Top Neck Clams, Ocean Herbs, Brown Butter; Wine Pairing: 2012 Langhe, Chardonnay, Elio Grasso

Fifth Course: New Jersey Blue Crab, Jersey Corn Pudding, Green Tomatoes; Wine Pairing: 2011 Vouvray, Le Mont Sec, Domaine Huet

Sixth Course: New Jersey’s Rocky Hill Farms Pork Belly, Sepia, Sea Buckthorn, Sea Beans; Wine Pairing: 2010 Napa Valley, Cabernet Sauvignon, Stags Leap, Regusci

Seventh Course: Sweet Tastes of the “Jersey Shore; Wine Pairing: 2010 Austria. Beerenauslese, Heidi Schrock

The cost of the seven-course “Tastes of the Sea” menu is $125.00 per person; $175.00 per person with wine pairings (plus tax & gratuity).
