On Saturday, May 18th, 6:30 p.m., The Salt Studio, 5 Lenape Road, Andover, New Jersey, will celebrate Irish cookery with a special dinner menu inspired by Chef Bradley Boyle’s recent travels through Ireland.
Mr. Boyle, also the proprietor of Salt Gastropub in Stanhope, NJ, traveled through Ireland from March 20th through April 23rd, working, eating and visiting with some of Ireland’s top restaurants, chefs, and food artisans throughout the country. Guests are invited to join Mr. Boyle for dinner and hear why and how the dishes listed below made it onto the menu for the evening. Diners will sip some incredible Irish whiskeys and maybe a Guinness or two, and enjoy some good old fashioned “craic.” A full bar will be available.

Cullen Skink: a traditional “Gaelic” creamy/smoky fish chowder made with smoked haddock & baby potato
Watercress Salad: with sliced marinated and seared beef heart with Irish porter cheese and roasted garlic vinaigrette
Jameson-Cured Salmon: with local honey and mustard schmear, brown bread and a lemon parsley salad
House-Smoked Irish Bacon and Cabbage Terrine: with a fresh parsley sauce and pickled beets
Medallions of Beef Sirloin: with prosciutto-wrapped and breaded asparagus, slow roasted tomato and shallots and a Guinness sauce
Crab “Brûlée”: lump crabmeat in a creamy savory custard with pickled cucumber and crisp toast
House-Made Irish Pork Sausage: with an apple relish and colcannon and a sweet onion gravy
Cream Pot: compote of apples and pears topped with a sweet cream custard with a chocolate “cap”
