Fork & Cork Global Street Food Dinner at Chakra Restaurant

On Thursday, April 25th, 7:00 p.m., at Chakra Restaurant in Paramus, New Jersey, Chef Thomas Ciszak continues his monthly Fork & Cork* dinner club series by taking guests on a tour of street foods around the world.

For the Global Street Food dinner, Chef Ciszak will take familiar street foods from three continents and apply his own unique twist to each. Dishes will be accompanied by stories from Mr. Ciszak’s past, from the herring popular in a Dutch town 40 miles from where he grew up, which he hated as a child but now loves, to a German version of the New York classic corner hot dog, to a textural play on Bubble Tea and more.

Matjes Herring: Herring, Beets, Dill, Pickled Onions; Wine Pairing: 2011 Riesling, Milbrandt Vineyards, Columbia Valley, Washington

Fish & Chips: Fingerling Potatoes, Shrimp Fried Mayonnaise

Dirty Water Dog: Boudin Blanc in Black Trumpet Mushroom, Booth, Brioche; Wine Pairing: 2011 Pinot Noir, The Four Graces, Willamette Valley, Oregon

Kati Roll: Young Chicken Ravioli, Cilantro, Quail Egg, Green Sauce

Lamb Köfte & Kebab: Loin, Skewer & Stuffed Meatball of Lamb, Cucumbers, Tzatziki Sauce; Wine Pairing: 2006 Shiraz, Trevor Jones “Boots,” Barossa Valley, Australia

Bubble Tea: Chilled Tea Soup, Coconut Gelée, Guava Sorbet; Libation: Shangahai Tea Cocktail

Belgian Waffle and Ca Phe Sua: Waffles with Spekulatius, Vietnamese Coffee Ice Cream; Cognac: Camus VS Eleganc

*About Fork & Cork: Chef Thomas Ciszak of Chakra in Paramus and Blue Morel in Morristown launched his dining club, Fork & Cork, a series of intimate monthly dinners, to appeal to adventurous diners. During Fork & Cork events, which are limited to only 25 guests, diners will join Chef Ciszak on a culinary adventure – a gastronomic journey across the globe, with a different theme each month, showcasing the Chef’s creativity and diverse culinary background.
