New Crystal Springs Resort Executive Chef Timothy Fischer has designed his first Easter menu for Crystal Tavern with spring in mind.
Appetizer: Fiddlehead Fern Salad, Shaved Truffles, Ramp Vinaigrette
Entrée: Jumbo Sea Scallops, Toasted Cherry Jus Lie, Micro Sorrel, Grilled Fennel, Early Season Baby Corn; OR: Herb Roasted Leg of Rifle Ranch Lamb, Spring Vegetable Gratin, Elephant Garlic Jus
Dessert: Strawberry Cheesecake, Rhubarb Compote, Caramel & Vanilla Sauces
The menu is $55.00 per person; $80.00 per person with wine pairings, and will be available, along with the à la carte menu, Saturday, March 30th, 5:00 p.m. – 10:00 p.m., and Sunday, March 31st, 11:00 a.m. – 10:00 p.m. The Easter Bunny will also be making a special appearance.
