On Tuesday, March 5th, Rob Bistro, 75 Main Street, Madison, New Jersey, will host a special wine dinner featuring the extraordinary vintages of the Domenico Winery. Owner/winemaker Dominick’s award-wining Cal-Italia wines are made with 100% California grapes and are a favorite in the San Francisco Bay area.
The evening will begin at 6:30 p.m. with a glass of wine chose personally by Dominick. Then, at 7:00 p.m., guests will sit down to feast on a four-course tasting menu prepared by Rob’s chef/proprietor Robert Ubhaus…
First Course: Vanilla Bean Salmon Gravalax, Mâche & French Bagel; Wine: 2009 California Chardonnay (Medium-bodied, soft & fruity on the palate; pear, apple, and melon with notes of vanilla, barrel spice & touch of light butter)
Second Course: Crisp Pork Rillette, Frisée-Lardon Salad; Wine: 2007 Amador Barbera (Medium-bodied with aromas of cherry cola, flavors of toasty oak, supple tannins, and bright acidity)
Third Course: Braised Short Ribs, Sweet Potato Purée, Roasted Asparagus; Wine: 2007 Napa Valley “Meritage” Merlot (Medium- to full-bodied, soft tannins with a lush mouth feel; black current, black cherry, dark chocolate, cigar box, spice, long finish
Fourth Course: Dark Chocolate Mousse, Fresh Strawberries, Crème Chantilly; Wine: 2005 “Black Silk” Ruby Red Dessert Wine (Black cherry & cassis with notes of chocolate)
