The Frog and the Peach in New Brunswick, New Jersey, recently announced its new six-course prix fixe winter tasting menu. And with each course, Wine Director Jim Mullen has paired a different style of Sherry. The menu is now available every evening; and will be until the spring.
Listed below are the menu and the Sherries, along with their ratings, which are taken from current reviews in the Peñin Guide to Spanish Wines; where a review in Peñin is not available, from Robert Parker.
Cornmeal-Crusted Oyster: Smoke Salmon Rémoulade, Lime; Sherry: La Ina Fino (96, Peñin)
Duck Consommé: Bacon Fat, Wild Rice; Sherry: Lustau “Los Arcos” Amontillado (90, Robert Parker)
Prosciutto-Wrapped Tuna: Parsnip Pear Purée, Caper Brown Butter; Sherry: Lustau Palo Cortado “Almacenista Vides” (93, Robert Parker
Braised Lamb Neck: Roasted Wheat, Marcona Almond, Dried Apricot, Green Olive, Aromatic Braising Jus; Sherry: Valdespino “Don Gonzalo” Oloroso VOS (96, Peñin)
Monte Enebro: English Muffin, Truffle Honey; Sherry: Bodegas Tradición Oloroso, 30-Year VORS (93, Peñin)
Fig Bread Pudding: Sweet Potato, Molasses; Sherry: Lustau East India Solera (90, Peñin)
According to Wine Director Jim Mullen: “Except for the dessert wines, these Sherries are dry, in fact, very dry. They are utterly unlike the cream Sherries associated with the old aunt in the murder mystery; these are the real Sherries that the Spanish kept for themselves. They represent the best “quality to price” ratio of any wines in the world.”
The cost of the winter tasting menu is $59.00 per person without wine; $104.00 per person with the wine pairing.
