Sam Mickail’s CUT Steak House, located within the stunning 4Sixty6 Nightclub & Event Complex in West Orange, New Jersey, has just made its debut. Partnering with the renowned chef is longtime New Jersey resident and investor Ralph Cestone, owner of 4Sixty6.
Mr. Mickail is multinational and multicultural: born in Cairo, raised in France, trained in Switzerland, staged in the finest kitchens in Europe. Prior to CUT, Mr. Mickail was affiliated with The Terrace on New York’s Upper West Side and the Highlawn Pavilion. He was the opening chef at Rare The Steak House in Cedar Grove, NJ, and, most recently, chef/partner at Frank’s Waterside in Edgewater.
Highlights from the CUT dinner menu include a pristine raw bar with shrimp, clams, sea urchin, and oysters; four onion soup gratin; “popcorn” snails with young garlic, potato purée, and crispy basil; ranch pork chop with crispy Cranshaw melon and honey-lime glaze; Dover sole meunière; and an array of great steaks with choice of béarnaise, au poivre, or perigourdine sauces.
CUT’s Supper Club menu (available 11:00 p.m. – 3:00 a.m.) features veggie spring rolls with Thai chili sauce, Kobe burger duet with applewood smoked bacon and aged Vermont cheddar, and chocolate brownie with whipped cream… plus an exotic selection of sushi and yakitori.
CUT is open for dinner Wednesday – Saturday, 5:30 p.m. – 10:30 p.m. Lunch service will be available later in the year.
