On New Year’s Eve, Monday, December 31st, Chef Jose Garces’ Andalusian tapas bar and restaurant, Amada, at Revel in Atlantic City, New Jersey, will celebrate the arrival of 2013 with a sumptuous chef’s tasting menu.
The restaurant will host three seatings: 6:00 p.m., 8:00 p.m., and 10:30 p.m. The early seatings will feature two menus priced at $80.00 per person and $100.00 per person, respectively. The 10:30 seating will offer one menu, $125.00 per person, plus a complimentary midnight cava toast (tax & gratuity additional). Throughout the evening, guests will be treated to live flamenco performances on the custom-built stage, visible to the entire dining room as well as from the casino floor beyond.
The spectacular menu, prepared by Chef de Cuisine Anthony Scuderi, will begin with an assortment of Spanish cheese and charcuterie, followed by a variety of small plates and several new items created just for the holiday season. These include: Wagyu Carpaccio, Wagyu New York strip from Idaho’s Snake River Farms, sliced thin and served with red bell pepper paint, pickled pearl onins, and fried lima beans seasoned with espelette and lemon zest; and Mushroom Fedua, porcini and oyster mushrooms with fideo pasta, sherry-glazed onion, and sliced fresh alba white truffles.
Customized Spanish wine pairings will complement the menu, which will be available for $45.00 per person during the early seatings and $70.00 per person during the last seating.
