Chef José Garces’ Amada to Host Rioja Wine Pairing Dinner

On Thursday, October 11th, 7:00 p.m., Chef José Garces’ Andalucian tapas bar and restaurant, Amada at Revel in Atlantic City, New Jersey, will host a winemaker’s dinner featuring four courses of Chef Garces’ award-winning Spanish cuisine paired with the wines of renowned Rioja producer Lopez de Heredia.

Lopez de Heredia is among the world’s foremost producers of Rioja wines, including some of the most artful and expressive interpretations of the viura and tempranillo grapes. His rare and complex wines are rightly celebrated for their inherent taste and thoughtful aging.

The spectacular menu, prepared by chef de cuisine Anthony Scuderi, will include the following…

First Course: Jamón Ibérico de Bellota, acorn-fed Iberian ham, with Camerano, Riojana goat’s milk cheese with preserved peach & Acacia honey; and Escabechados, baby clams with pickled guindilla pepper & basil and tuna with pickled cauliflower & baby carrot; Wine Pairing: Viña Gravonia Crianza, 2003

Second Course: Setas a la Planxa, matsutaki mushroom with Caña de Cabra cheese & herb espuma; Capparones, red kidney beans with house-made chorizo, pork belly & morcilla; Montadito de Trucha, trout with jamón ibérico, quail eggs & capers, and Montadito de Conejo, braised rabbit with amarena cherries; Wine Pairing: Viña Cubillo Crianza, 2005; Viña Bosconia Reserva, 2003

Third Course: Chuleta a la Uva, 28-day dry-aged rib eye with grape vines and veal jus; Alubias con Almejas, pochas with cockles, bacaloa and salchichon; Alcachofas, artichokes with house-made chorizo and roasted lemon purée; and Patatas Riojanas, Peanut fingerlings with burnt tomato and smoked paprika; Wine Pairing: Viña Tondonia Reserva, 2001; Viña Tondonia Gran Reserva, 1994

Dessert: Arroz Con Leche, smoked gala apple, angelica, olive oil, crema nata sherbet; Wine Pairing: Viña Tondonia Reserva Blanco, 1996

Amada is an authentic Andalusian tapas bar located on the casino level at Revel, with sweeping views of the Atlantic Ocean, as well as a central white marble bar and chic lounge seating.
