Sam Mickail’s CUT Steakhouse, located within the stunning 4Sixty6 Nightclub and Event Complex in West Orange, New Jersey, is scheduled to make its debut late October/early November.
Partnering with Chef Mickail is longtime New Jersey resident and entrepreneur/real estate developer Ralph Cestone, proprietor of 4Sixty6.
The multinational, multicultural chef was born in Cairo, raised in France, trained in Switzerland, and staged in the finest kitchens in Europe. Prior to CUT, Chef Mickail was affiliated with the Terrace on New York’s Upper West Side, Highlawn Pavilion, and Il Tulipano. He was the opening chef at Rare The Steak House in Cedar Grove, NJ, and, most recently chef/partner at Frank’s Waterside in Edgewater.
Highlights from the CUT dinner menu will include selections from the elaborate pristine raw bar; smoked salmon with classic accompaniments; “popcorn” snails with young garlic, potato purée & crispy basil; four-onion soup with sherry; Berkshire pork spare ribs with homemade spiced passion fruit BBQ sauce; herb-crusted double cut Colorado rack of lamb; Dover sole meunière (filleted tableside); and, of course, an array of great steak with a choice of béarnaise, au poivre, or perigoudine sauces.
CUT’s Supper Club menu (available 11:00 p.m. – 3:00 a.m.) will feature crab cake “lollipops” with honey mustard; veggie spring rolls with Thai chili sauce; Kobe burger duet with applewood smoked bacon and aged Vermont cheddar; chocolate brownie with whipped cream; and an exotic selection of sushi and yakitori.
Sam Mickail’s CUT Steakhouse, located at 466 Prospect Avenue, West Orange, New Jersey, will be open for dinner Wednesday through Saturday. Lunch service will be added later in the year.
