Easter Dining at Chakra Restaurant

chakra-interior2On Easter Sunday, April 8th, Executive Chef Thomas Ciszak of Chakra Restaurant, Paramus, New Jersey, will celebrate spring with a three-course prix-fixe menu served from 12:00 noon – 5:00 p.m.

 

FIRST COURSE

Lobster Bisque: Tarragon Chantilly, Cognac, Poached Main Lobster

Caesar Salad: Romaine Hearts, Lemon Confit, White Anchovies

Mesclun Greens:  Fine Herbs, White Balsamic Vinaigrette

White & Green Asparagus Salad: Gravlax, Warm Dill Vinaigrette

Roasted Beets & Smoked Duck: Fennel, oranges, Fennel Pollen

Horseradish Crusted Crab Cake: Snow Pea Shoots, Mustard Seed Vinaigrette (+$6.00)

Truffled Linguini: Spring Mushroom Consommé, Parmesan Foam

Grilled Marinated Tofu: Bok Choy, Coconut-Pumpkin Broth

 

SECONDCOURSE

Stuffed Baked Maine Lobster: Slow-Roasted Tomatoes, Eggplant, Herbs de Provence, Mesclun Greens

Salmon Medallion: Spring Vegetables

Chili-Cinnamon Glazed Chilean Sea Bass: Potato-Wrapped Shrimp, Lemongrass Nage (+$8.00)

Goffle Road Chicken: Spring Vegetables

Pork Tenderloin & Maple-Anisette Glazed Ham: Cumin-Carrot Purée, Fennel Salad

Roast Leg of Lamb for Two:  Potato Gratin, Grilled Mediterranean Vegetables, au Jus

Filet Mignon of Beef:  White & Green Asparagus, Spring Mushrooms, Bordelaise Sauce (+$8.00)

Vegetarian Eggplant Tarte: Sacred Chow Tofu, Tomato, Bell Pepper Coulis

 

DESSERT

Warm Chocolate Brioche Bread Pudding: Macerated Berries, Vanilla Ice Cream

Peanut Dacquoise: Caramelized Bananas, Jivara Milk Chocolate, Hawaiian Sea Salt

Coconut Tapioca: Golden Pineapple, passion Fruit Sorbet
