During the month of March, owner Sam Mink’s Oyster House, 1516 Sansom Street, Philadelphia, Pennsylvania, will celebrate an annual tradition: seasonal shad dishes expertly prepared by Chef Andy Kitko.
A migratory fish whose season in the region is incredibly short, shad has been a springtime feature at the Mink family seafood restaurants since 1947 when Mr. Mink’s grandfather began running Kelly’s on Mole Street.
Shad will be featured on the menu as long as it is available, including a special three course shad dinner, which will be available nightly from today, Monday, March 12th, through Saturday, March 17th.
“Chef Kitko’s light touch with seafood is ideal for shad’s distinctive flavor and prized roe,” noted Mr. Mink. “Each year, we look forward to the return of this rare and exceptional fish; and this menu is one of my favorites that we’ve ever served at Oyster House.”
Chef Kitko’s shad menu will include: Pickled Shad with beets, cucumbers, crème fraiche, and rye croutons, a nod to the simple way the fish is often served, which is lightly sprinkled with vinegar; Smoked Shad Roe Croquette with confit shad emulsion and pickled spring onions, spotlighting the briny roe that is one of the most sought-after parts of the fish; and Seared Shad with fava beans, grilled cippolini, pea tendrils, and romesco, a simple preparation befitting the fish’s Latin name, sapidissima, meaning “tastiest.”
