On Wednesday evening, March 14th, the Silverspoon, 503 West Lancaster Avenue, Wayne, Pennsylvania, will host a four course cheese tasting dinner. Featured will be locally made artisan cheeses paired with a special regional menu.
First Course: Silverspoon’s Signature Mushroom Bisque, Petite Grilled Cheese Sandwich, Truffled Mushroom Duxelle, Baby Arugula
Cheese: “Seven Sisters” aged washed rind cow’s milk cheese; hints of summer grasses, almonds, and caramel
Second Course: Mixed Greens Salad, Port Wine Poached Pennsylvania Native Seckel Pears, Crumbled Blue Cheese, Caramelized Pepper Bacon, Pickled Red Onions
Cheese: “Birchrun Blue” raw milk natural rind semi-soft blue cheese; Birchrun Hills Farm, Birchrunville, PA
Third Course: Slow-Roasted Berkshire Pork Shoulder, Stewed White Beans & Escarole, Oven-Cured Tomatoes, Shaved Fieldstone Cheese
Cheese: “Fieldstone” 8-week cave-aged goat’s milk cheese; earthy, nutty flavor; Yellow Springs Dairy, Chester Springs, PA
Fourth Course: Cheesecake, Warm Berry Compote
Cheese: Fresh Chevre with smooth, creamy texture and slightly sharp finish; Shellbark Hollow Farms, West Chester, PA
