On Sunday, March 25th, Chef Jose Garces’ Spanish tapas bar and restaurant, Amada, 217 – 219 Chestnut Street, Philadelphia, PA, will host its first ever “Pig Out,” featuring two seatings of all-you-can-eat Cochinillo Asado, or roasted whole suckling pig.
A signature dish since the restaurant opened in late 2005, cochinillo asado has never been available to groups smaller than four guests, and requires a 72-hour advance order. However, for one night only, guests will be able to reserve a seat in Amada’s rustic-chic dining room and enjoy a special menu including all-you-can-eat, hand-carved suckling pig.
Reservations are required for this very special meal, and will be held with a credit card. Cancellations with less than 24 hours notice are subject to a cancellation fee. Guests may choose from $55.00 per person (plus tax & gratuity) for food only; or $75.00 per person (plus tax & gratuity) for food and bottomless red & white sangria.
The restaurant will host two seatings: 4:00 p.m. – 5:30 p.m. and 7:00 p.m. – 8:30 p.m. the entire restaurant will be reserved exclusively for the celebration of this indulgent feast.
The menu will include: a first course of Ensalada Verde, a green salad with fava beans and avocado; Tortilla Española, Spanish potato & egg cake with saffron aioli; and Chorizo à la Planxa, grilled skewers of Spanish sausage.
These delectable items will be followed by the roasted suckling pig, carved by Chef de Cuisine Adam Zensinger and his team. The whole pigs are brined for two days in sugar and salt water, and then oven roasted for hours and seasoned with arbequina olive oil and sea salt. Accompaniments include braised black kale with garbanzo beans & lemon, herb-roasted fingerling potatoes, and bacon-rosemary white beans with Spanish ham.
Flan with caramel will be served for dessert.
