This recipe for beef tenderloin, which I have made on numerous occasions, most recently at a family gathering, is adapted from the 1991 Southern Living Engagement Calendar of Beautiful Food.
Serves 10
Ingredients:
1 5-pound beef tenderloin, trimmed
1 ¼ teaspoons garlic salt
1 cup Burgundy wine
¼ cup soy sauce
12 tablespoons butter
1 teaspoon lemon-pepper seasoning
Procedure:
Place meat on a lightly greased, shallow roasting pan; sprinkle with garlic salt. Bake at 425 degrees for 10 minutes.
Combine wine, soy sauce, butter, and lemon-pepper seasoning in a small saucepan; cook until mixture is thoroughly heated.
Pour the mixture over the tenderloin; bake an additional 30 to 40 minutes, basting occasionally with pan drippings. Continue baking until the thermometer registers 140 degrees for rare, 150 degrees for medium rare, or 160 degrees for medium.
Slice and serve.
