Chef Thomas Ciszak, executive chef/owner at Chakra in Paramus, New Jersey, and consulting chef at Copeland in Morristown, NJ, has created a special menu featuring that pale, delicate, and delicious harbinger of spring, white asparagus.
Born and raised in Germany, Chef Ciszak grew up with this seasonal treat. “Spring is a very special time there, he noted, “Because most restaurants traditionally feature white asparagus, usually accompanied by ham, veal, or pork.”
