FIRST COURSE (Choice of):

Seared Day Boat Scallops, Ruby Red Grapefruit Salad, Citrus Vinaigrette

Hand-Rolled Garganelli, Fresh Black Truffle, Leek Purée, Parmigiano-Reggiano Espuma

Seared Foie Gras, Apricots, Honey Crisp Apple Purée, Chamomile Broth

Fluke Tartare, Tsar Nicolai Caviar, Shiso, Black Rice Tuille
