Chef Dominique Filoni will prepare six extraordinary courses to match the equally extraordinary vintages…

New Jersey Fluke Crudo: Paddlefish Caviar, Cauliflower Mousse, Uni Vinaigrette

Wine: Domaine Bzikot Bourgogne Blanc 2008

 

Mediterranean Sea Bass: Pan-Seared Branzino, Braised Endive, Orange Gastrique

Wine: Domaine Larue Saint Aubin 1er Cru “en Remilly” 2008

 

Spiced Pork: Braised Pork Shoulder, Savoy Cabbage, Maitake Mushrooms, Pork Braising Jus

Wine: Domaine Maillard Chorey les Beaune 2007

 

Deconstructed Philly Cheese Steak: Dry-Aged Flatiron, Morels, Onion Rings, Toasted Brioche, Pomme Pont-Neuf, Sweet Peppers

Wine: JM Guillon Gevrey Chambertin 2007

 

Dessert: Fourme d’Ambert Foam, Crispy Apple, Spiced Pecans

Wine: Beaumes de Venise (and Blue Cheese?)
