Maine Lobster and Shrimp Bisque, Garnished with Steamed Crawfish ($5.00 Supplement)

Homemade Foie Gras Boudin with Parsley Mousse & Black Trumpet Mushroom Sauce

Tuna Tartar with Fresh Ginger and Caviar Vinaigrette

Duo of Red & Yellow Endives, Asian Pears, RocBleu Cheese with Walnut Oil Dressing

Fresh Artichoke Terrine with Goat Cheese and Balsamic Vinaigrette

Main Courses (Choice of):

Steamed Lobster with Spinach, Mango, Green Papaya, Pequillo Pepper, Hearts of Plam, Passion Fruit Butter Sauce ($12.00 Supplement)

Filet of Seared Venison with Sweet Potato, Beets, Yukon Potato Purée, Juniper Berry Sauce

Roasted Guinea Hen Breast with Jerusalem Artichokes Au Gratin and Guinea Leg, Port Wine Sauce
