Appetizer (Choice of):

Hand-Crafted Foie Gras Terrine “au torchon, Mini and Micro Salad and Winter Fruit Compote, Toast Points

Artichoke Potage, Crayfish Sautéed, Caviar Whipped Crème

Boneless Quail Sausage stuffed with Almost Dry Fruit Salsa, Lobster Consommé and Lobster Ice Cream

 

Main Course (Choice of):

Caramelized Diver Sea Scallop, Risotto with Black Truffle, Poultry Jus Cappuccino dusted with Powdered Pure Cocoa

Slow-Cooked Side of Buffalo Rib Eye, Cognac, Red Wine, Crushed Black Pepper Devilish Sauce, lady Apple, Cranberry Relish and Winter Vegetables

Coq au Vin, Breast Confit in Red Wine Sauce with Vegetables Mirepoix, Leg diced with Chestnut and Quince in Thin Crepes

 

Dessert:

Buche de Noel, Chocolate Truffle and Chestnut Crème, Whiskey Warm Sauce
