Twenty-nine-year-old Chef Matthew Zagorski of Rittenhouse Square’s famed Rouge recently unveiled his new “Winter Chef’s Tasting Menu,” a celebration of the flavors and textures of the season.
“This new tasting menu is a special departure for us,” Chef Zagorski noted. “It’s the first time that we’ve offered a dinner like this. It includes many of my favorite new dishes, and is a great way for our guests to experience them all at once.”
Menu items include: Macaroni and Cheese with Fontina cream, chervil breadcrumbs, and Lancaster County goat cheese; Seared Day Boat Sea Scallops with mushroom-potato risotto, and spiced red wine-golden raisin reduction; King Salmon with braised root vegetables and three-meat glaze; Yellowfin Tuna with eggplant and porcini mushroom chutney, olive oil, and oregano; and Braised Beef Brisket with butternut squash purée, haricots verts, and roasted garlic jus. A tasting of Domestic Cheeses completes this very special meal.
The “Winter Chef’s Tasting Menu” is available Tuesday through Saturday evenings for $55.00 per person; the menu also includes an optional $30.00 wine pairing to enhance each course.
