Co-Proprietor Daryl Sorrentini and General Manager Warren Zinn of the daryl Wine Bar & Restaurant in New Brunswick, NJ, have announced that the former chef de cuisine, Juan Carlos Fernandez, is now partner and executive chef of the restaurant.
Mr. Fernandez is a graduate of the French Culinary Institute and an alumnus of both restaurant David Drake and Nicholas. Born in Seville, Spain, his Mediterranean upbringing instilled him with an innate appreciation for cooking and taught him the important relationship between a culture and its gastronomy. It is also his Andalusian heritage that guides his culinary style.
Together, partners Juan Carlos Fernandez and Warren Zinn have crafted a new and exciting menu that represents both what patrons have been asking for and what they have come to expect from daryl. Some things do remain the same. Popular appetizers such as the spicy tuna tartar, the daryl salad, and the mini burgers with applewood bacon and aged English cheddar remain menu constants. Of the several new appetizers, two new additions – the gingered orange carrot soup and the herbed Dijon gnocchi with butternut squash, cranberries, and toasted walnuts – are sure to be exceedingly popular. The sautéed sweetbreads have been moved from the entrée side to the appetizer side of the menu.
Chef Fernandez has also added several new main courses, including slow-roasted organic chicken with romesco potato, mousseline roasted eggplant and jus roti. Also new is the Berkshire pork loin with potato pancake, sautéed apples, and bacon-cider gastrique.
Daryl still boasts the area’s only state-of-the-art wine preservation system that allows for over sixty wines to be served by the glass, dispensing wine in 2-, 4-, or 6-ounce servings. You can also buy from the retail store within the restaurant, where every wine on the menu is available.
