On Monday, April 20th, Vine Restaurant and Lounge in Basking Ridge will host a Tuscan wine dinner, beginning at 7:15 p.m. The special guest will be Countess Ginevra Venerosi Pesciolini, owner and managing direction of the Tuscan winery, Tenuta di Ghizzano.
Ghizzano is a small village midway between Florence and Pisa. Ginevra Pesciolini’s family has lived in Ghizzano since the 14th century. Under her direction, the 48 acres of vineyards on the 865-acre estate have been replanted and Italy’s highly-regarded consulting enologist, Carlo Ferrini, has been retained. Banning herbicides and chemical fertilizers, she converted her estate to organic agriculture in 2003 and biodynamic viticulture in 2006. And her dedication to nature follows into the winemaking with the use of natural yeasts, the minimal amount of sulfur, fermentation without additives, and corks from organically raised trees.
