And executive chef Corey Heyer’s superlative contemporary American cuisine is the perfect complement to the amorous ambiance. Provocative starters include: gratin of jumbo lump crab with ruby red grapefruit, mâche, hearts of palm, radish, vanilla sabayon, and rye crisp; kataifi-wrapped shrimp; warm goat cheese croquettes; and a triptych of tuna sashimi, salmon tartare, and oyster. For your main course, be sure to try the roulade of Griggstown Farm pheasant, crispy slow-cooked suckling pig, or the coriander- and sesame-crusted grouper caressed by salsify, roasted pears, pearl onions, root vegetable pearls, and a provocative Thai basil & sat anise broth.
